My Favorite Roast Chicken

🥄 INGREDIENTS
🔹 1 3-4lb Hendricks Farm Chicken, 🔹 Sea Salt, 🔹 Freshly Ground Black Pepper, 🔹 1 Large Bunch Fresh Thyme (plus 20 extra sprigs), 🔹 1 Lemon, halved, 🔹 1 Head Garlic, cut in half crosswise, 🔹 2 Tablespoons (1/4 stick) Real Butter, melted, 🔹 3-4 Pounds of Potatoes, thickly cubed, 🔹 Olive Oil
🍽️ DIRECTIONS

➡️1.  Preheat the oven to 325 degrees. ➡️2.  Cover the bottom of a roasting pan with the onions and potatoes. ➡️ 3.  Toss with Olive Oil, Salt, Pepper, and 20 sprigs of Thyme. ➡️ 4.  Spread out onions and potatoes evenly on bottom. ➡️ 5.  Place the Chicken on top of the vegetables to keep it off of its own juices while cooking (this will make a crispier chicken). ➡️ 6.  Stuff the inside of the Chicken with the Thyme, Lemon halves, and Garlic halves. ➡️ 7.  Brush the outside of the Chicken with butter and sprinkle with Salt and Pepper ➡️8.  DO NOT COVER.  Roast Chicken for about 2 1/2 to 3 hours or until juices run clear. ➡️ 9.  Remove the Chicken from the oven and let it sit for 20 minutes UNCOVERED to cool.  DO NOT CUT EARLY.  Try and be patient, though it will be hard with the delicious aroma.  :) ➡️ 10.  Serve cut chicken with vegetables.
